Papa’s Chicken Fried Steak
Beef tenderloin cut into 6 or 8 ounce steaks
Beat steaks with a mallet until thin
Season with salt and pepper
Egg, flour then egg and flour again
Cook in a pan with vegetable oil until blood comes through then turn not letting the flour burn
Remove to plate with paper towels, keeping warm
Drain oil from the pan being sure to leave browned bits and as much flour as possible
Mix equal parts flour and water (flour is already in pan so be careful). Add watered down milk to consistency of preference (remember that gravy will continue to thicken after cooking is done). Pour both into pan and stir until thoroughly mixed and to desired thickness. Pour over steaks and serve.
